Missions requesting units I don't have, this needs a DSU but I only have 4 police stations. Please fix as the mission isn't possible unless you have a DSU.

I agree, this looks to be correct
As you build more stations then you need more resources
A DSU and OTL were some of the earliest I added
The disadvantage of the DSU is you need to spend coins on recruitment
My trick here is to recruit three at a time, then move two before the end of the week (free transfer)
Very shortly you will need ARV, Traffic Car, and so on
Equally, there is an option for Critical Care On / Off
I use the RRV with one Critical Care staff, for ease of identification -
A unit requesting a dog support unit came in when I only have 3/4 police stations whilst it says you need 6 for the first call. It was a fight on a train.
The second was when I had 2 ambulance stations and got a call requesting OTL which is needed around 4 or 6 stations.
The second one is easy to correct but the DSU needs dog handler training.

This call is requesting an ambulance officer when I only have 7 ambulance stations, they are stated as only being required at 15 ambulance stations and a mass casualty extension in which I have neither.I keep getting calls like this that I shouldn't be getting at all, and it's getting annoying.

There seems to be some confusion here as you say 15 Ambulance stations but the screenshot requirement is 6

This is simply the minimum requirement in order to obtain the vehicle
It has nothing to do with mission requirements
Therefore you probably require the ICCU instead -

I do agree with you that missions should not require ambulance officers until the player has built a mass casualty extension. However, it is possible to get an ambulance officer without that extension, as they are one of the units available at Home Response Locations. That may be why those missions aren't locked behind the extension, and either way they offer a way around your situation for a cheaper investment than the extension.

That is not the criteria, it is the number of stations that has been met
The OP is looking at Ambulance Officers but there is also the option of ICCU
It is this lower option that has caused the issue
I noticed this quite early on and now have four Fire Stations with ICCU
None of my Ambulance Stations have Officers (as yet)
I apply ICCU to the larger Fire Stations, grade four or five (as per Scottish Fire and Rescue)
This is a much easier path to take -
Ambulance Officers are not equivalent to ICCUs and neither unit can substitute for the other. The Ambulance Control Unit is the one which can swap out for an ICCU (or have an ICCU swap in for it). The Ambulance Control Unit will not substitute for an Ambulance Officer on a mission.
OP says they have fewer than the 15 ambulance stations, and the game does state that 15 is the trigger for the requirement. It's my view that missions should not generate requiring units which the game says in other places you don't yet need. I've seen this issue with Ambulance Officers being required earlier than 15 stations quite a few times so I do think it needs addressing as it's obviously causing confusion for new players. The "Carbon monoxide poisoning in a school" mission currently requires an Ambulance Officer, but its prerequisites for spawn only require 6 ambulance stations -- that's contrary to what the game tells players about when they'll start to need the unit.

I do, this is a common / known "issue"
The requirement for missions is stations, not vehicles
As a result this mission can be created
The common solution, if you do not have the required vehicles, is to just let the mission time out
