Hi, I’m a bit confused. Every time I collect a pumpkin nothing actually happens, can someone advise as to what it actually does?

Think of them as virtual pats on the back. Also, check the "number of pumpkins collected" under "Awards" to see if thats going up. Thats all it is.

Make sure you are clicking on the pumpkin. When you do so you'll get an acknowledgment that you've collected it.
Click on the little pumpkin:
You should see this green message, note how the pumpkin also disappears:
